It depends what type of Prot monk you're going to be running. There are two types of "specific" Protection builds that come to mind when trying to find a nice template:
Life bonder: One who protects by using available bonds such as Life Bond, Protective Bond, etc. Usually it's best to combine these with Balthazar's Spirit and Blessed Signet so you can maintain your energy. It's generally wise to use other low-cost skills when doing this because it can be hard to keep your energy up at times, depending on how many enchants you're going to maintain. Also a good thing to use with this is a few energy stealers from the mesmer line. This will not only help you keep your energy up but take energy from the opposing team.
Martyr: Martyr itself isn't actually in the Protection line of skills, but I find it useful to use Martyr on a protection monk. If you're going to be using this, it's good to have at least Mend Ailment to cure all the conditions you'll have on you, and possibly having Purge Conditions to use for when you have 5 or 6 conditions on you. Any skills go well with this build really; things such as Reversal of Fortune, Protective Spirit and shielding hands work together to make a very good prot monk imo.
Aside from those two, a good "generic" Protection monk would have skills such as Aegis, Reversal of Fortune, Mark of Protection {E}, Mend Ailment, Protective Spirit, Shielding Hands and a ressurect. Used at the right time, these skills can help out a healing monk a lot.
